What is the best way to store my chocolate?
Because we use high quality, fresh ingredients, our boxes chocolates are best enjoyed within 7 days of purchase. They are best stored somewhere cool and dry, between 15 and 20 degrees.
Due to the weather in Brisbane, it’s often necessary to store the chocolates in the fridge to prevent them from melting. Place your product into an airtight container, or wrap tightly in cling wrap before placing in the fridge. When removing your treats from the fridge, leave them in the cling wrap and allow your chocolate come back to room temperature in a cool location. This will take around 30 minutes. Keeping your chocolate wrapped and letting it come back to room temperature slowly will prevent them from developing condensation on the surface. Condensation can lead to sugar bloom, as the sugar in the chocolate will soak up the moisture and crystallise. The are still fine to eat, but the look and texture are affected.
What does the name 31 Degrees mean?
31 Degrees is the working temperature for tempered couverture, specifically dark couverture.
Do you ever get sick of chocolate?

What is a praline? What are truffles?
Pralines refer to chocolates made in a mould and filled with ganache. Truffles are piped from ganache and hand rolled, before being dipped in chocolate. Pralines can also be referred to as bonbons or moulded chocolates. You can find our current flavour list here.
Can you make allergen free chocolates?
We will always do our best to accommodate allergies and dietary requirements. All our products are made in the same kitchen, and so our products may contain traces of nuts, dairy, gluten, soy, wheat and eggs. We do take the utmost care to maintain safe food handling practices so that we can offer gluten free, dairy free and nut free treats for everyone to enjoy.
What chocolate do you use?
The majority of our products are made using Valrhona. We also use Lindt and Republica del Cacao couvertures. Couverture is chocolate that has a high proportion of cocoa butter.
What is the turnaround time for my order?
We offer same day delivery on a number of products to the Brisbane CBD and surrounding suburbs, as well as the major hospitals. Same day orders must be placed before 12pm (midday) Monday- Friday; orders placed after this time will be delivered the following business day. Please ensure there will be someone available to accept the delivery. For more information, check out our Shipping Info.
Wedding and large orders (500+) must be placed a minimum of 21 days in advance. Rush orders are considered on a case by case basis.
Piñata Cakes require 3 days notice. Rush orders are considered on a case by case basis.
Celebration Cakes are available for next day pick up or delivery, provided the order is placed by 2pm the previous day.
Custom chocolate orders require 7 days notice to ensure we can source the required ingredients.
For all other orders, please allow up to 3 business days.
Can I get a quote on my order before placing it?
Yes, absolutely! Simply email us with the details of your order, and we will draw up a quote. If you accept the quote, an invoice will be drawn up for you. For orders over $100, a 50% deposit will be required within 3 days. The remaining 50% is due between 3 and 14 days before delivery, depending on the order and the time frame.
Is my order secure?
Payments are processed using Stripe, a dedicated third party gateway, to guarantee your protection. Card information is not stored and all card information is handled over SSL encryption. Please read the terms & conditions for the payment gateway chosen for the transaction as they are responsible for the transactions made.
I found a picture of some products that I would like 31 Degrees to make for me. Is this possible?
Whilst we are always happy to look at the photos you have gathered for inspiration, we cannot, and will not, directly copy any other brands work.
