31 Degrees Custom Chocolates is a Brisbane based business, creating artisan custom truffles and pralines for every occasion.

Choose your flavours, colours and finishes, using locally sourced ingredients, fresh cream and delicious French and Swiss couvertures.


How did 31 Degrees come about?

My love affair of food and chocolate properly started whilst living in France, where I ate my way through all the chocolates and pastries that I could lay my hands on!  When I returned to Australia, I studied as a pastry chef, eager to learn how to create all the wonderful things I had experienced. After baking and decorating cakes for 18 months, I knew that I have to follow my true love of working with chocolate!

I started 31 Degrees at the end of 2013, and properly launched in the beginning of 2014, working out of the wonderful Wandering Cooks in South Brisbane for nearly 2 and a half years. I was finally able to open my very own store, inspired by the beautiful stores I visited in France, in mid 2016.

What does the name 31 Degrees mean?

31 Degrees is the working temperature for tempered couverture, specifically dark couverture.

Do you ever get sick of chocolate?


What is the best way to store my chocolate?

As all our pralines are made with fresh ingredients, they will last up to two weeks somewhere cool and dry, between 15 and 20 degrees.

Whilst not ideal, due to the weather in Brisbane, it’s often better to store them in the fridge to prevent them melting or developing bloom. Place your box into an airtight container, or wrap tightly in cling wrap before placing in the fridge. Let your chocolate come back to room temperature still in the container or cling wrap before opening, for about 1 hour. Wrapping your chocolates and letting them come back to room temperature slowly will prevent them from developing condensation on the surface. Condensation can lead to sugar bloom, as the sugar in the chocolate will soak up the moisture and crystallise. The are still fine to eat, but the look and texture are affected.

Chocolates that have been subject to extreme temperature fluctuations that cause them to melt and re-solidify may lead to fat bloom. Cocoa butter contracts as it sets, so softer cocoa butter may be forced out and solidify on the surface. They are still fine to eat, but the look and texture will be affected.

To tell the difference between the two types of bloom, simply rub it with your finger- if it feels raised and bumpy, it is sugar bloom, and if it rubs off, it is fat bloom.

How long will my chocolates last?

31 Degrees Custom Chocolates uses fresh ingredients and no preservatives,  so they have a relatively short shelf life of approximately 2 weeks in proper storage (in a cool and dry location, between 16 and 20 degrees Celsius).  They are best eaten fresh.

What is a praline? What are truffles?

Pralines refer to chocolates made in a mould and filled with ganache. Truffles are piped from ganache and hand rolled, before being dipped in chocolate. Both can be fully customised with colours, finishes and flavours. Pralines can also be referred to as bonbons or moulded chocolates.

Can you make allergen free chocolates?

We will always do our best to accommodate allergies and dietary requirements. All our products are made in the same kitchen, and so may contain traces of nuts, dairy, gluten, soy, wheat and eggs.

What chocolate do you use?

The majority of our products are made using Valrhona. We also use Lindt, Republica del Cacao, and Cacao Barry couvertures. Couverture is chocolate that has a high proportion of cocoa butter. .

What is the turnaround time for my order?

We offer same day delivery on a number of products to the Brisbane CBD and surrounding suburbs, as well as the major hospitals. Same day orders must be placed by 12 midday Monday- Friday; orders placed after this time will be delivered the following business day. Please ensure there will be someone available to accept the delivery.

Wedding and large orders (500+) must be placed a minimum of 21 days in advance. Rush orders are considered on a case by case basis.

Piñata Cakes require 7 days notice. Rush orders are considered on a case by case basis.

Custom chocolate orders require 7 days notice to ensure we can source the required ingredients. 

For all other orders, please allow up to 72 hours turnaround time. 

How do I get my chocolates?

Chocolates can be delivered to the Brisbane CBD and surrounding suburbs for $10 per address. The $10 delivery zone can be seen here. Deliveries outside the coloured area, but shown on the map (the greater Brisbane region), will attract a delivery fee of $15 per address.  Please ensure you are there to meet your delivery. Redelivery may attract a charge. If you are ordering as a gift for delivery to a secondary address, please ensure the recipient will be available for delivery.  If you would like same day delivery of your order, please ensure you select products from the ‘Same Day Delivery’ page, otherwise we can’t guarantee the products will be available! For orders over 48 chocolates, please contact us before placing your order.

For addresses outside Brisbane, your order will be express posted or sent via courier, depending on your location, starting at $15. Chocolates can be posted to Australia only, and will be sent Express post with an icepack or sent via overnight courier. We cannot guarantee the state of the chocolates when they arrive. Chocolates will not be posted on Fridays, to ensure they do not sit in the depot over the weekend. Orders placed for deliveries outside of the Express Post next day delivery zones will not be posted after Wednesday. Please consult the Express Post details to check if your location in the next day delivery zone. If the day is above 35 degrees Celsius, we reserve the right to delay postage. You order cannot be posted to a PO Box without prior negotiation. We will endeavour to ensure you receive your products on the requested date, but cannot guarantee. 

Your order can of course be collected from in store at no charge!

Can I get a quote on my order before placing it?

Yes, absolutely! Simply email us with the details of your order, and we will draw up a quote. If you accept the quote, an invoice will be drawn up for you. For orders over $100, a 50% deposit will be required within 3 days. The remaining 50% is due between 3 and 14 days before delivery, depending on the time frame.  

Do you wholesale?

Is my order secure?

Payments are processed using Stripe, a dedicated third party gateway, to guarantee your protection. Card information is not stored and all card information is handled over SSL encryption. Please read the terms & conditions for the payment gateway chosen for the transaction as they are responsible for the transactions made.

I found a picture of some products that I would like 31 Degrees to make for me. Is this possible?

Whilst we are always happy to look at the photos you have gathered for inspiration, we cannot, and will not, directly copy any other brands work. We do not use the pyramid mould.

What is your Privacy policy?

We collect information from you when you place an order or fill out a form. When ordering or registering on our site, as appropriate, you may be asked to supply your name, email address, contact number and delivery address. Your information, whether public or private, will not be sold, exchanged, transferred, or given to any other company or third party for any reason whatsoever, without your consent, other than for the express purpose of delivering the purchased product or service requested. The email address you provide for order processing will only be used to send you information and updates pertaining to your order. You can subscribe and unsubscribe to our mailing list at any time.
